Green Lentil Curry

I love Curry dishes. All of them. This recipe is one I created in my own kitchen, using ingredients I already had on hand. It’s easy to swap out ingredients for what you have in your own pantry, so feel free to use it as an outline rather than a strict recipe. Although I am not a vegetarian, I do limit my intake of meat, and eat vegetarian meals most days. The lentils and rice make this dish super filling, and leftovers taste even better! I make a big pot and can get about 5 or 6 servings of the dish. Below is the ingredient for the curry itself. As far as the rice goes, I used jasmine rice because that’s what I had, but basmati or brown rice would be fine. 

 

Ingredients

1 1/2 Cans Coconut Milk (either full or reduced fat, or a combination of both)

1 cup dried green lentils , rinsed 

1 onion, diced

3 cloves garlic, chopped

1 tsp fresh grated ginger  

1/2 cup cubed eggplant  

1 small bag of peas, thawed or frozen

2 cups chopped kale  

2 tbsp Olive Oi 

2 Tbsp Coconut Sugar  

Spices*:

2 tbsp Curry Powder

1 tbsp Turmeric

1/2 tsp Cinnamon  

1/2 tbsp Cumin  

salt and pepper to taste 

*feel free to adjust the amount of each spice according to your liking  

 

 Directions: 

sautee the onions, garlic, eggplant and grated ginger in olive oil over medium high heat. season with salt and pepper, and spices. Sautee until the onions are clear and eggplant is soft. Add the coconut milk and coconut sugar, stir, bringing to a boil. Add the lentils, while boiling. Before covering the pot to simmer, add the kale and peas, reduce heat, and simmer for about 25 minutes, until he lentils are tender. Adjust any spices, salt, or sugar according to your taste. 

 

Serve with rice and naan. 

 

Again, this is not a traditional recipe from a specific cookbook. It is a recipe I created using what I already had in the kitchen, loosely based off of recipes I found online. It’s a delicious, warm, comforting dish for fall with lots of veggies, and it’s pretty quick and easy to make. Let me know how yours turns out!
